Make sure your jars or containers are clean, dry, and ready to use.

In a saucepan, bring the water to a boil. Stir in the salt and sugar until dissolved. Remove from the heat, add the vinegar, and set aside.

Pack the chopped vegetables tightly into your container. The vegetables will soften slightly as they pickle, so don’t be afraid to really fill the jar.

Pour the brine over the vegetables until fully covered. Add the garlic and spices. Seal the container tightly and gently shake to distribute the spices.

Refrigerate for at least 24 hours before eating to allow the flavours to develop.

Store in the fridge for up to 3 months.

I love serving these on a snack plate or chopping them into sandwiches, salads, grain bowls, or even on pizza for an extra burst of flavour!

Notes: Feel free to substitute other firm vegetables like radishes or pickling cucumbers. Softer vegetables like broccoli, English cucumber, or tomatoes don’t hold up as well in this style of pickling, so it’s best to leave them out. For a milder flavour, reduce or omit the chili flakes and peperoncini.
