Dijon Mustard
1/2 tsp
Nutmeg
1
Preheat your oven to 425 and use 1 Tbsp of butter to grease your baking dish
2
In a large pot, with boiling water, gently steam your cauliflower until al-dente for about 5-7 minutes. Remove and load into your greased baking dish.
3
In a separate pot, melt the remaining 3 tbsp butter and 3 tbsp of flour together to create a roux. Make sure to cook this mixture off for about 5 minutes or until golden and toasty. Once ready slowly whisk in the 1.5 cups of milk until a creamy sauce is formed.
4
Fold in 1.5 cups of the grated cheese and the mustard and nutmeg. Taste the sauce here and adjust the seasonings, adding salt and pepper if you like.
5
Once the sauce is to your liking, pour it over your prepared cauliflower making sure to cover the florets. Top the dish with the remaining ½ cup of cheddar cheese.
6
Put your prepared cauliflower on a sheet pan ( to avoid any drips or mess) and Bake in the oven for 45 minutes or until the mixture is golden and bubbling and cauliflower is tender.

Notes: Feel free to have fun and experiment with the combination of cheeses, a mixture of cheddar and gruyere work well in this dish! This dish can be made in advance, prepared up to 2 days beforehand and baked in the oven when ready to serve.
