In a large mixing bowl, combine the shallots, red wine vinegar, and salt. Use your hands to gently massage the shallots for a minute or two to quickly pickle them. Set aside while you prepare the remaining ingredients.

Once your ingredients are ready, add the white beans, olive oil, cucumber, scallions, dill, tomatoes, capers, and hot-smoked salmon to the bowl.

Gently stir to combine. Taste and adjust the seasoning as needed. This salad is ready to enjoy right away, but it can also benefit from marinating for a few hours in the fridge.

When ready to serve, top with everything bagel seasoning and spoon over some butter lettuce leaves.

Notes: I suggest using hot-smoked salmon for this recipe because it holds up really well to marinating and adds a delicious smoky flavour to the dish. Feel free to swap it for tinned fish or lox. If using lox, I recommend adding it to the salad just before serving.
