In a heavy-bottomed skillet, melt the butter over medium heat. Then sauté the shallots and garlic along with the bay leaves and thyme until soft and fragrant, about 4 minutes.

Tip in your chicken livers and cook until the livers are just slightly pink, 4–6 minutes, then add in your vermouth, if using, and your cream. Cook for another 2 minutes to remove the alcohol.

Season with salt and pepper, then blend the mixture in a blender or food processor until smooth.

Taste and adjust the seasonings, then portion the mixture into ramekins. You can pour an additional 1 Tbsp of melted butter over the top to seal the ramekins, then serve once the butter is solid. Normally cooling takes about 4 hours. Garnish with a bay leaf and enjoy!

Notes: Feel free to omit the alcohol and substitute 2 Tbsp of water and ½ Tbsp of balsamic vinegar, then proceed with the recipe as follows. These keep in the fridge for up to one week or in the freezer for up to three months. Remove from the freezer the day before serving and thaw in the fridge, then allow to come to room temperature before serving.
