Tahini Maple Roasted Carrots

These maple roasted carrots are super easy to prep and are also so pretty to look at! Carrots are a nutrient powerhouse and are so underrated! They are amazing for hormone health and overall health in general. Include these delicious carrots at your next family gathering like Thanksgiving!

Filtered Water

1/4cup

Tahini

1cup

Maple Syrup

1Tbsp

Maple Syrup

1/4tsp

Ground Cinnamon

2bunches

Heirloom Carrots

1/4cup

Unsalted Butter

2

Garlic Cloves

3/4tsp

Sea Salt

Instructions

Blend the water, tahini, 2 tbsp maple syrup, cinnamon, ¼ tsp sea salt until smooth. Add more water if needed to thin it out. Set aside.

In a small bowl, combine the melted butter, 3 Tbsp maple syrup and garlic. Let it sit for 5 minutes.

Preheat the oven to 425°F and line a baking sheet with parchment paper. Place the carrots on the baking sheet, pour the maple butter mix onto the carrots and use your hands to coat them. Spread out into an even layer and cook for 35 to 40 minutes, turning half way through, or until the carrots are fork tender.

Drizzle the tahini sauce on top (and more salt if you like) and serve. Enjoy!

Note: If some of the carrots are bigger than the others, cut them in half lengthwise.
