Pear & Cardamom Muffins

Cardamom is one of those spices that I think of when I think about the holidays. I like that it can be used in savoury or sweet dishes. It gives off a citrusy taste which is really yummy with the pears.

Egg

1cup

Unsweetened Coconut Milk

1/3cup

Unsweetened Coconut Yogurt

1/2cup

Cane Sugar

1tsp

Vanilla Extract

1 1/2cups

Oat Flour

1/2cup

Coconut Flour

2tsp

Baking Powder

1/4tsp

Sea Salt

1tsp

Cinnamon

2tsp

Cardamom

Instructions

Preheat the oven to 350°F and fill a muffin pan with 12 liners.

In a large mixing bowl, whisk together the egg, coconut milk, coconut yogurt, cane sugar and vanilla extract until smooth.

Add the oat flour, coconut flour, baking powder, sea salt, cinnamon and cardamom. Mix until well combined. Fold in the pears.

Fill each muffin liner approximately ¾’s full. Bake for 20-22 minutes or until you can insert a toothpick and it comes out with a few crumbs on it.

Store in a container on the counter for up to three days.
