Warm apples, oats, and cinnamon just scream cozy! This apple crisp is not only delicious, but it makes your house smell delicious, too!

    Preheat oven to 350 degrees F and grease a deep baking dish. I used a 7.5 x 12 dish.

    In a large mixing bowl, add your apples, lemon juice, 1/3 cup of maple syrup, vanilla extract, tapioca starch 1 tsp cinnamon and ¼ tsp sea salt. Mix with hands to evenly coat the apples.

    Pour the apple filling into the baking dish and spread the apples out to fill the dish. Set aside.

    In a mixing bowl, add the oats, coconut flour, maple sugar, 2 tbsp maple syrup, 2 tsp cinnamon and ¼ tsp sea salt, mix to combine.

    Add the coconut oil and mix again. The best way is to get in there with your hands! The mix will be a little crumbly but also some pieces will stick together.

    Pour the mix over the apple filling and evenly spread on top.

    Bake for 45 minutes or until the oats turn golden brown.

    Serve in bowls with your favourite vanilla ice cream (I used coconut ice cream).

    Store leftovers in an airtight container in the fridge for up to 3 days. Reheat if you prefer it warm.
