Asparagus
shaved (look for thicker stems)

Garlic Cloves
small, minced
1/4 cup
Extra-Virgin Olive Oil
1/2 tsp
Sea Salt
1 1/2 Tbsp
Lemon Juice
1 Tbsp
Dijon Mustard
2 Tbsp
Chives
coarsely chopped
3 Tbsp
Pine Nuts
toasted
2 Tbsp
Goat Cheese
2 Tbsp
Mint Leaves

Use a vegetable peeler to peel/shave your asparagus stems. Set aside in your salad bowl.

Mix the garlic, oil, salt, lemon juice and mustard together in a small bowl. Adjust seasoning, if desired. Pour over the asparagus evenly.

Garnish with chives, pine nuts, goat cheese and mint leaves. Serve and enjoy!
