Easy Onion Jam

Super simple onion jam to impress your friends (or yourself). So many ways to use it - on burgers, chicken, steak, vegetables, crostini, toast, and of course a charcuterie board. Onions are a powerhouse, and not because they make your eyes water! They are loaded with antioxidants that can enhance immunity!

Condiment

Ingredients

1/4 cup

Extra-Virgin Olive Oil

2 large

Sweet Onions

diced

1 tsp

Sea Salt

1/2 tsp

Black Pepper

3/4 cup

Coconut Sugar

1/2 cup

Balsamic Vinegar

Bay Leaves

Instructions

In a large sauteé pan or pot, on medium heat, heat the olive oil.

Add the onions and coat them in the oil.

Add the sea salt, black pepper and stir.

Cook until the onions start to get golden brown, about 15 minutes. Remember to stir occasionally.

Lower the heat and add the coconut sugar. Let it sit for 2-3 minutes before stirring it in. Add the bay leaves.

Add the balsamic vinegar and stir.

Cook for another 7-10 minutes or until the jam has thickened and most of the liquid has been absorbed.

Remove from heat (and remove the bay leaves) and cool before transferring to a container.

Store in an air-tight glass container in the fridge for up to 5 days.

Note: Cooking time may vary depending on the size of your onions and your stove.
