This is a simple salad perfect for meal prep (you can easily double or triple the recipe)! It has your healthy fats, protein and all the greens. This is a great blood sugar balancing meal that will keep you feeling nourished and satiated!

Spring Mix

Apple

1/4 cup

Red Onion

1/3 cup

White Cheddar

1/4 cup

Pecans

2 Tbsp

Dried Cranberries

1/2 tsp

Sea Salt

Chicken Breast

2 Tbsp

Extra-Virgin Olive Oil

2 Tbsp

Maple Syrup

1 Tbsp

Apple Cider Vinegar

Instructions

In a small bowl mix together the olive oil, maple syrup, apple cider vinegar and 1/4 tsp sea salt to make your dressing.

Grab your favourite bowl and fill it with mixed greens.

Add the rest of the ingredients and pour dressing on top.

Substitutions: Make it vegetarian by replacing the chicken with chickpeas, tofu or tempeh. Make it dairy-free by omitting the cheddar or replacing it with plant-based cheese. Add more carbs by adding quinoa or rice.
