Sweet and savoury waffles for when you just can’t decide what you want! Crispy bacon goes in the batter and on top of the waffles too. The waffles are a great grain-free option from Stellar Eats.

Egg Whites

1/3cup

Water

1packet

Stellar Eats Pancake Grain-free Baking Mix

1spray

Avocado Oil Spray

1/2cup

Blueberries

1drizzle

Whisky Maple Syrup

Instructions

Preheat the oven to 400ºF and line a baking sheet with aluminum foil. Place the bacon strips on the baking sheet and bake for 15-17 minutes until cooked through to your liking. Let cool and then chop.

In a medium sized bowl, add the eggs, water and avocado oil and whisk well. Add ½ of the bacon crumbles and the Stellar Eats pancake mix and whisk to combine.

Heat a waffle iron over medium-high heat and spray with avocado oil. Pour half the batter into the waffle maker and close. Cook for about 3 to 4 minutes.

Remove the waffles and break apart into individual pieces. Top with remaining bacon, blueberries and drizzle with maple syrup.

Substitutions: If you don't eat pork, try turkey bacon instead or omit. No whiskey maple syrup, you can use regular instead. instead
