Shiitake Bacon Style Crisps

Turn shiitake mushrooms into crispy bacon easily at home! This is my favourite way to make vegan bacon as mushrooms are a great meaty substitute. If you have liquid smoke, it works great in this recipe, but even without it, it’s still very tasty.

Extra-Virgin Olive Oil

Kosher Salt
1/2tsp
Smoked Paprika
1tsp
Maple Syrup
1/2tsp
Garlic Powder
1/2tsp
Liquid Smoke
2cups
Shiitake Mushrooms
Instructions

In a large bowl, combine the olive oil, salt, smoked paprika, maple syrup, garlic powder and liquid smoke and mix well.

Toss in the sliced mushrooms and use your hands to rub the mixture into the mushrooms. Let it marinate for 30 minutes.

Preheat the oven to 350℉ and line a baking sheet with parchment paper.

Place the shiitakes on the baking sheet in a single layer. Bake for 10 minutes, flip and bake for 10 minutes more. Increase the heat to 375℉ and bake for three to five minutes, remove and flip again. Bake for an additional two minutes, until crispy on both sides.

Note: Oven temperatures can vary, so check on the mushrooms after 18-20 minutes to avoid any burning.

Substitutions: No liquid smoke: omit. No garlic: omit garlic powder.
