Spicy Peach Salad

This spicy peach salad is a great way to make the most of peach season, which sadly is too short. Toss ripe and juicy peaches with red onion and serrano and then dress with a lime and honey vinaigrette.

Red Onion

Serrano Pepper

1Tbsp

Extra-Virgin Olive Oil

2tsp

Fresh Lime Juice

1tsp

Honey

3Tbsp

Peanuts

2Tbsp

Fresh Mint Leaves

2Tbsp

Fresh Thai Basil Leaves

1tsp

Flaky Salt

Instructions

In a medium sized bowl, combine the peaches, onion and serrano.

In a small bowl, whisk together the oil, lime juice and honey.

Pour the dressing over the peaches and transfer to a platter, serving dish or bowl.

Top with peanuts, mint and Thai basil. Garnish with flaky salt. Enjoy!

Substitutions: No Thai basil: omit and use all fresh mint leaves. Serrano: use jalapeño instead.
