Preheat the oven to 325°F (160°C). Lightly grease a silicone muffin pan and place it on a sheet pan. Set aside. Bring about 3 cups of water to a boil.

In a blender, combine the eggs, cottage cheese, corn starch, salt, pepper, and 1 cup of the grated cheese. Blend on low speed for about 1 minute, or until smooth and fully combined.

Pour the egg mixture evenly into the prepared muffin cups. Top each cup with the remaining cheese and your feta and gouda.

Carefully pour the boiling water onto the sheet pan around the muffin pan to create a water bath. This gentle steam helps create lighter, fluffier egg bites with a silky texture.

Carefully transfer the pan to the oven and bake for 25–30 minutes, or until the egg bites are set and lightly golden on top.

Remove the muffin pan from the water bath and let cool for 5 minutes before gently removing the egg bites from the pan.

Allow the egg bites to cool completely before transferring to an airtight container for storage.
