Fire up the grill for these delicious cajun inspired sausage and veggie skewers. Perfect for a quick summer night dinner! This recipe is great for gluten free, grain-free, diabetes, mental health and low sugar conditions or diets.

Zucchini

Red Onion

1

Yellow Bell Pepper

4stalks

Green Onion

2tsp

Cajun Seasoning

Andouille Sausages

For this recipe you will need 4 skewers. If you are using wooden skewers, soak them for at least 30 minutes prior to using.

In a medium sized bowl, toss in the zucchini, red onion, pepper and green onion. Add in the cajun seasoning and toss to combine.

Heat the grill over medium-high heat.

Pierce the sausage and veggies on the skewers, folding the green onion in half to fit on the skewers.

Spray the grill with avocado oil, place the skewers on the BBQ and cook for 12 to 14 minutes, turning as needed to char.

Remove the skewers, divide onto plates and enjoy!

Substitutions: No andouille sausage: use another type of sausage. No cajun seasoning: use a different spice mix.
