Baked Cranberry French Toast

This baked french toast recipe is easy, comforting and the perfect accompaniment to a cooler weekend morning. With this recipe, all the work happens the night before so that when you wake up, you only need to turn the oven on and pop your masterpiece in the oven. How easy is that?! Serve your baked french toast with berries and orange segments to balance the meal.

Dried Cranberries
1/3cup
Pecans

Full Fat Coconut Milk
1tsp
Vanilla Extract
1tsp
Cinnamon
1/3cup
Maple Syrup
1cup
Fresh Berries
1cup
Orange Segments
Instructions

Grease an 11” x 9” casserole dish. Stack the bread slices in a domino effect. Sprinkle the cranberries and pecans all over the bread.

Whisk together the egg, coconut milk, vanilla extract, and cinnamon in a large bowl. Pour the mixture slowly over the bread, being sure to cover all of the bread. Cover the casserole and chill overnight or until you are ready to bake.

Preheat the oven to 350°F and bake the casserole for 30 minutes or until the bread is somewhat spongey to the touch and there are some crispy edges. Serve with maple syrup and enjoy!

Substitutions: No egg bread: use your favourite loaf of bread. No coconut milk: use your favourite milk or dairy-free milk alternative, like cashew milk.
