Celery

Carrots
peeled and chopped
1 1 1/2-inch piece
Turmeric Root
Peeled and minced

Bone In Skin On Chicken Thighs

Filtered Water

Kosher Salt

Black Pepper

Green Onions
cut into 1-inch pieces

Add the celery, carrots, turmeric, ginger, garlic and chicken to a pressure cooker, being sure to place the chicken on top.

Pour the water in to the pot, add salt and pepper to taste. Close and seal the lid and set the pressure cooker to cook on high for 35 minutes.

Manually release the pressure, remove the chicken and shred the chicken, leaving the skin and bones aside.

Add the chicken back to the pot and add the green onions and spinach. Stir through to wilt the spinach. Adjust the seasoning to taste and serve. Enjoy!
