In a large bowl, add the shredded cabbage and salt. Using both of your hands, massage and squeeze the cabbage to soften and extract liquid from the cabbage. Be sure to wear gloves if you have any cuts on your hands.

Continue massaging the cabbage for about five minutes or until it has become very soft and turns a slight yellow tinge.

Transfer the cabbage to a glass jar and pour the liquid over top. Use a large cabbage leaf to cover and weigh down the sauerkraut. If cabbage is not fully submerged in liquid, you can add some salt water to cover it. Add 1 tsp of salt to 1 cup of water and use this solution if adding more liquid.

Cover with cheesecloth or a kitchen towel out of direct sunlight for at least seven days. Seal and refrigerate. Enjoy!
